When does a Kitty become and adult?

I have an 8month old kitty-American siamese. She loves her IAMS kitty dry food. My question is when will she be concidered an adult cat and when do I switch her to adult cat dry food. Once a week I give her milk (whole or 2%) as a treat. Is that okay? I also give her some kitty treats once a week. She is my baby, she always cuddles with me at night time and when I wake up she is there licking my face. Her tounge is very scrapy. Tomorrow she will receive her first shots and she will also be getting spayed.

I live in California, and I've contacted many vets due to the fact that we don't have a regular vet as of yet. Many of these vets explained that they will not be able to spay my cat unless she is vaccinated first. I went through the City of Santa Clara web site and there I found a Low Cost Spay/Neuter clinic. At this clinic they will spay my cat for $10 and shots for $32. I am a low income single parent so as you can see I will take this opportunity and well it's at a spay/neuter clinic they know what they are doing.

Relist: I want a different opinion.
The expert said that shots should not be given at the same time when being spayed. I was told other wise. Also the expert did not give me a positive answer he/she said 'should be right...' instead of 'that is the time to...'I need a direct answer to my inquisition.

I took her to the vet today for the spay and shots. The vet did not mention any of the above which you have just stated. In regards to my first inquiry, then what you mean is that at 1yr of age (human years) she will be concidered an adult. Untill then I will be able to switch her to an adult dry food.
