My cat has started eating/chewing on his kitty litter. Not when its soiled. His diet is excellent. Only the best. The litter is not toxic. Any thoughts?

vet said if he throws up or get direaha to bring him in. Otherwise, he couldn't see the problem

Sometimes cats do this in their efforts to pass impacted hair that is irritating to their intestine. In the wild, cats ate plants or licked clay to aid in their digestion. Some cats have retained this innate behavior.
You can give your cat laxatone once a day and if he eats wet food you can add 1 tsp. of canned pumpkin (not pie filling). Also, purchase kitty grass to help him as well.
It is necessary to resolve this because your cat can move on to plastic bags and other unnatural food objects and seriously injure his intestine by causing a blockage.

Canned Pumpkin - something I can get in grocery store?

We have grown the kitty grass and put down by his food. He sniffs but has not gotten the hang of eating it. Any thoughts as to how to encourage him.

Laxitone is a flavored petroleium jelly product that will enable your cat to pass ingested hair in his stool. You can get it at any pet supply or vet or online. The canned pumpkin is avalable in MOST grocery stores. Make sure it is NOT pie filling as that contains unheathy ingredients.If you sprinkle a little catnip on the kitty grass that might encourage him. It is also OK if he eats some of the catnip.
